So, I need to understand how this series works.

I know there is an old manga, and then there is the 2000s(?) series, in that series the main character is told to be the son of the previous champion, then, there is the new manga this series is based on.

Thus:

The order of this franchise is: Old Manga->2000s(?) Anime->this new Anime?

Or I am missing something?

The short answer is that this is a direct continuation of the manga/anime from the 70s~80s. While there's never been any official word on the matter, the second series from the 2000s appears to no longer be canon, due to the fact that the newer manga directly contradicts several key elements of it.

It's been like 33 years since the original anime went off the air. I have to believe that they are going to keep it accessible to new viewers using flashbacks.

While I'm sure there will be the occasional flashback to the OG series when appropriate, it should be pointed out that in Japan the original manga & anime for Kinnikuman has pretty much never been made unavailable. The manga has seemingly always been kept in print (& is even available digitally now), while the anime has always been on the air somewhere, so each new generation of kids have always had the ability to experience Kinnikuman in some way while growing up.

Simply put, Kinnikuman is a cultural institution in Japan, so there really isn't a need to make the Perfect Origin anime "accessible" to newcomers, since Japanese viewers will still be the primary focus for the show, I'm sure. Could that potentially suck for newcomers from around the world, especially should it get simulcasted (which I'm sure it will)? Yes, but that's just how it is when it comes to something as long as Kinnikuman.

Sumippe voicing Meat is hilarious.

But what a star-studded cast for what seems like a well-animated addition to the franchise!
